BBQ SALMON AND LETTUCE WRAPS

You need 3 lettuce leaves, 1 tbsp fat free cream cheese, ¼ tsp salt free lemon and pepper mix, 2 oz salmon, ¼ cup chopped red onion, 1 small cucumber slices and 2 tbsp sun dry tomatoes with oil sliced. Put the lettuce on a plate and spread cream cheese over this add lemon and pepper and salmon. Add onion and put the cucumbers between the leaves. On top-tomatoes.

RED BELL PEPPER SANDWICH

You need 2 slices bread sourdough, 5 tomato slices, 2 tsp vegan butter, ½ cup spinach, 1/3 cup pepperjack Daiya cheese shredded, ¼ cup basil leaf, 3 slices roasted yellow pepper, black pepper pinch. PALEO SWEET POTATO

You need ½ cup sweet potato pureed, 100 g coconut flour, 1 tsp tartar cream, 2 tsp coconut oil melted, 30 g tapioca flour, ½ tsp baking soda, ¼ tsp salt, ¼ cup coconut milk, 2 tbsp honey, 1 tsp lemon juice and 6 eggs. Wrap the potato in foil and roast for 60 min. puree with blender. Grease a pan with coconut oil and turn oven on 350F. mix the flour, tartar, soda, tapioca and salt. Whisk the puree, coconut oil, juice, honey and coconut milk. Whip eggs foamy with stand mixer. Put the liquid while you whip. Sprinkle the dry mix over the liquid and mix with spatula then put this in muffin pan and bake 30 min. let this cool and enjoy.

GRILL EGGPLANT

You need 3 tbsp olive oil, 1 eggplant sliced, 2 garlic cloves minced, 1 laof crusty bread (ciabatta sliced), salt and pepper, mozzarella sliced, 2 tomatoes sliced and 14 basil leaves. Clean the grill and oil it. mix the garlic and oil, salt and pepper. Brush this oil over the bread cuts and grill them. Add cheese on top. Brush oil the eggplant too. Grill it for 15min and add this over the cheese. Same with tomatoes, they go over the eggplant, basil over them.

GLUTEN FREE TAPIOCA WRAP

You need a cup milk, 2 and half cups tapioca flour, ¼ tsp kosher salt, 1 egg beaten, 2 oz Parmigiano-Reggiano cheese grated, 3 tbsp canola, 7 oz part skim mozzarella grated. Simmer the milk a few min and turn heat off. Add in the tapioca, salt, oil. Let this cool and put it in blender. Add the egg and mix again to make this thick. Add the cheese and pulse again. Remove this of the blender and divide in same parts. Freeze them for 30 min. heat 1 casket and put each piece on flat surface sprinkled with tapioca. Have the dough in 5 pieces, dust them with tapioca and roll them in an 8 inch circle diameter. Put the 1st dough cycle on the skillet and cook until can be removed with spatula.

PLANTAIN TORTILLAS

You need 3 plantains peeled, 1 egg, ¼ cup water, ½ tsp salt, 2 tbsp coconut oil. Blend the egg, salt, plantains and coconut. Put water a bit over them. Put this batter in a parchment paper and bake for 10 min. remove, flip and bake 10 min more.

TOMATO AVOCADO BURGER

You need: 4 tomatoes, 1 pound organic beef, ¼ tsp black pepper, ½ tsp fine sea salt, 1 tsp chili powder, 1 avocado, 2 tsp lime juice, ½ tsp ground cumin, 2 tbsp Greek yoghurt, 1 tbsp mayo, handful alfalfa. Scoop the seeds of the tomatoes and mash avocado smooth. Add mayo, lime, yoghurt, cumin. Add the rest of avocado with the salt. And add salt to the beef, chili and pepper too. Divide in 4 parts and shape them like patty. Grill them on each side. Grease a skillet with oil and cook the tomatoes. For burgers, put sprouts on the bottom and top them with beef and 2 tbsp avocado sauce.

PORTABELLA HALLOUMI BURGER

You need 4 portabella mushrooms, 2 tbsp olive oil, 3 and half tbsp. balsamic vinegar, 2 slices tomato, 2 slices halloumi, handful basil, salt and pepper. Wash the mushrooms and heat up the grill. Mix the vinegar and oil. Put the mushrooms dipped in this and grill them. Add halloumi and grill each side. Sprinkle salt and pepper. Make the burger with the mushrooms AT the bun, and halloumi Is the burger. Tomato and basil goes on top.
